Earlier this month, we were fortunate enough to move our operation into a 1000 sq ft kitchen with all of the amenities. But the one amenity it is lacking is an indoor smoker. At Paulman Labs, we take our smoking very seriously and this presented a problem.
In the long-term, we would like to upgrade to a unit that would allow us to smoke dozens of pounds of fresh peppers at a time, but we just don’t have that kind of throughput for our operation…yet.
But what we do have is a rather ingenious method of smoking our peppers indoors. We are using a very small electric “pressure-smoking” unit that allows us to smoke approximately 2 lbs of peppers at a time. Thus far, we have been very impressed with the ability of this little unit to pump the smoke flavor into the peppers while keeping the smoke leakage to a minimum. That last part is, of course, a vital concern when smoking peppers indoors.
